2012 Cabernet Sauvignon, Valley View
Twelve years in the cellar have transformed this classic Bordeaux-style blend into a wine of remarkable depth and nuance. The once-vivid black fruit has evolved into notes of dried black currant, fig, cedar chest, cigar box, and worn leather, with hints of tobacco leaf, graphite, and baking spice. The French oak has integrated beautifully, lending subtle cocoa and espresso rather than overt toast. On the palate, the tannins have softened into a silky texture while the wine retains enough freshness to carry a long, savory finish. This is a mature, elegant expression of Santa Barbara County Cabernet that rewards slow enjoyment and pairs beautifully with roast lamb, beef tenderloin, aged cheeses, or wild mushrooms.
75% Cabernet Sauvignon, 7% Merlot, 8% Cabernet Franc, 3% Petite Verdot, 7% Malbec
